Vegan Spice Bag

Suitable for vegans and vegetarians. Serves 2.

Ingredients:

  • 4-5 medium sized potatoes, chopped into chip-sized pieces, 
  • 200g firm tofu, 
  • 1 onion, thinly sliced, 
  • 0.5 green pepper and 0.5 red pepper, deseeded and thinly sliced, 
  • 1 red chilli, deseeded and finely chopped, 
  • 2 green onions, finely chopped (for garnish),
  • 1 tbsp soy sauce, 
  • 1 tsp sugar, 
  • 1 tsp coarse salt, 
  • 1 tsp smoked paprika, 
  • 1 tsp ground coriander, 
  • 1 tsp ground ginger, 
  • 0.5 tsp cayenne pepper, 
  • 1 tsp dried oregano, 
  • 0.5 tsp ground cumin, 
  • 0.25 tsp cinnamon, 
  • 5 tbsp vegetable oil.
Method:

  • First, to prepare the potatoes, chop them into chip-sized pieces and rinse with cold water to remove excess starch. This will help the chips to develop a more crispy exterior. Rinse until the water runs clear and then pat dry with a tea towel.
  • To prepare the tofu, chop into bite-sized chunks and place the pieces on a paper towel. Place another paper towel on top and weigh down with a pan or something heavy enough to press the water out of the tofu but not so heavy that it breaks it. Let sit for 20 minutes to extract water.
  • In a small bowl, combine the sugar, salt, paprika, coriander, ginger, cayenne, oregano, cumin, and cinnamon and mix to combine. This is the main spice bag seasoning mix.
  • Place a large pan over medium high heat and add 4-5 tbsp of vegetable oil. Gently place the chips into the pan. Shallow fry the chips for 15-20 minutes or until they are golden and crispy. Rotate the chips during the cooking time to make sure they cook evenly.
  • Remove the chips from the pan and add to a bowl. Toss with salt and pepper.
  • Place a wok or another large pan over medium high heat with 2 tbsp of oil. Add the tofu and cook for 10 minutes or until each side is brown and crispy.
  • Add the soy sauce and mix to combine.
  • Add the onions, peppers, and chilli and cook for 4-5 minutes or until soft.
  • Add the chips and mix to combine.
  • Add 2 tbsp of the spice bag seasoning mix, or more or less to taste, and mix to ensure that everything is evenly seasoned.
  • Garnish with chopped green onions and serve while hot.
