Campsite Curry; One-Pot Curry with Minimal Effort, Ingredients, and Prep Time
Suitable for vegans and vegetarians. Serves 2.

- 1 bell pepper,
- 1 onion,
- 1 can chickpeas,
- 1 can chopped tomatoes,
- 1 can coconut milk,
- 1 cup rice,
- 1 1/2 cups water,
- 2 tbsp curry powder.
- Dice the onion and roughly chop the pepper.
- Place a large pot over medium heat with 2 tablespoons of oil or water.
- Add the onions and peppers and cook for 5 minutes or until they are soft.
- Drain and rinse the chickpeas and add them to the pot.
- Add the curry powder and mix until it covers all of the ingredients.
- Add the chopped tomatoes and coconut milk.
- Add the rice right into the pot along with the water.
- Reduce the heat and let simmer for 20-25 minutes. If you are using brown rice, let simmer for an additional 10 minutes.
- Once the rice is soft, season to taste with salt and pepper and serve.
