Campsite Curry; One-Pot Curry with Minimal Effort, Ingredients, and Prep Time

Suitable for vegans and vegetarians. Serves 2.


Ingredients:

  • 1 bell pepper, 
  • 1 onion, 
  • 1 can chickpeas, 
  • 1 can chopped tomatoes, 
  • 1 can coconut milk, 
  • 1 cup rice, 
  • 1 1/2 cups water, 
  • 2 tbsp curry powder.
Method:

  • Dice the onion and roughly chop the pepper.
  • Place a large pot over medium heat with 2 tablespoons of oil or water.
  • Add the onions and peppers and cook for 5 minutes or until they are soft.
  • Drain and rinse the chickpeas and add them to the pot.
  • Add the curry powder and mix until it covers all of the ingredients.
  • Add the chopped tomatoes and coconut milk.
  • Add the rice right into the pot along with the water.
  • Reduce the heat and let simmer for 20-25 minutes. If you are using brown rice, let simmer for an additional 10 minutes.
  • Once the rice is soft, season to taste with salt and pepper and serve.
