Chunky Dill Hummus

- 1 can or carton of organic chickpeas
- Tahini paste
- Juice of half a lemon
- 2-3 stalks of fresh dill
- Olive oil
- Salt & pepper
- Drain and rinse chickpeas and transfer to a large bowl.
- Crush chickpeas using a potato masher or your hands. Keep squishing, kneading, and working until you achieve your desired consistency. If you prefer a smoother texture, use a food processor or blender.
- Add a heaped teaspoon of tahini to the mashed chickpeas and mix it in. (If you don't have tahini, I've also made this with almond butter and that makes a great alternative.)
- Finely chop three quarters of the dill and coarsely chop the remaining quarter.
- Add the lemon juice and finely chopped dill and mix.
- Add 1-2 tablespoons of olive oil and mix.
- Add salt and pepper to taste.
- Transfer to a serving bowl or plate and garnish with coarsely chopped dill.
