Chunky Dill Hummus

Suitable for vegans and vegetarians


Ingredients:

  • 1 can or carton of organic chickpeas
  • Tahini paste
  • Juice of half a lemon
  • 2-3 stalks of fresh dill
  • Olive oil
  • Salt & pepper

Method:

  • Drain and rinse chickpeas and transfer to a large bowl.
  • Crush chickpeas using a potato masher or your hands. Keep squishing, kneading, and working until you achieve your desired consistency. If you prefer a smoother texture, use a food processor or blender.
  • Add a heaped teaspoon of tahini to the mashed chickpeas and mix it in. (If you don't have tahini, I've also made this with almond butter and that makes a great alternative.)
  • Finely chop three quarters of the dill and coarsely chop the remaining quarter.
  • Add the lemon juice and finely chopped dill and mix.
  • Add 1-2 tablespoons of olive oil and mix.
  • Add salt and pepper to taste.
  • Transfer to a serving bowl or plate and garnish with coarsely chopped dill.
