Scrambled Tofu

Suitable for vegans and vegetarians



Ingredients:

  • 1 carton of soft tofu, 
  • 1 green chilli, 
  • 1 spring onion,
  • 1 tbsp tamari or soy sauce, 
  • 1 tbsp nutritional yeast, 
  • 2 tsp turmeric, 
  • 1 tsp cumin, 
  • 1 tsp ground coriander, 
  • 2-3 stalks of fresh parsley (finely chopped), 
  • 1 stalk of fresh dill (coarsely chopped). 
  • Salt & pepper

Method:
  • Finely chop the chilli and spring onion, optionally deseeding the chilli.
  • Finely chop the parsley and coarsely chop the dill.
  • Heat pan to medium high heat with a tablespoon of rapeseed oil.
  • Add chopped chilli and spring onion to the pan and saute for 2 to 3 minutes.
  • Add tamari and cook down for another minute.
  • Add the entire carton of tofu straight into the pan. Begin to chop up and scramble the tofu until you achieve your desired consistency.
  • Add turmeric, cumin, ground coriander, and nutritional yeast as you scramble the tofu to mix the ingredients in.
  • Cook down for 10 to 12 minutes on a medium heat. Reduce as much as possible as soft tofu contains a lot of water that can make your scramble swampy.
  • Add chopped parsley and salt & pepper to taste and continue to reduce for another minute or 2.
  • Remove from heat and garnish with dill.
  • Serve on its own or with toast and with plenty of hot sauce.
