Sweet Potato Falafel Burgers
Suitable for vegans and vegetarians. Serves 4.

- 1 large sweet potato,
- 1 can chickpeas,
- 3-4 cloves garlic,
- 1/4 cup finely chopped parsley,
- 1/4 cup finely chopped coriander,
- 2 tsp cumin,
- 1 tsp turmeric,
- 1/2 tsp smoked paprika,
- 1 tsp dried oregano,
- 1 tbsp apple cider vinegar,
- 1 1/2 tbsp olive oil,
- 1/2 tsp baking powder,
- 2 tbsp all purpose flour,
- 1 tsp salt.
- Wrap sweet potato in tin foil and bake at 200 degrees celsius for 45 minutes to an hour or until it is soft and almost falling apart.
- Drain and rinse chickpeas.
- Add 1 1/2 cups of drained chickpeas to a bowl and, using your hands or a potato masher, mash to a rough paste.
- Once the sweet potato has been baked and has cooled enough so that it can be handled, remove the skin and mash with a fork.
- Add 1 1/2 cups of mashed sweet potato to the chickpeas and mix to combine.
- Finely mince the garlic and add to the mixture.
- Add all other ingredients and mix until everything is well combined and you have a smooth mixture. Add more flour if the mixture is too wet. Taste for seasoning.
- Using your hands, form 4 burger patties from the mixture.
- Place the patties on a well oiled baking tray and bake at 200 degrees celsius for 25 to 30 minutes, flipping half way through. Alternatively, you can place the patties on a frying pan or grill over medium heat and cook for 10 minutes, flipping half way through.
- Serve on a toasted bun.
