Sweet Potato Falafel Burgers

Suitable for vegans and vegetarians. Serves 4.


Ingredients:

  • 1 large sweet potato, 
  • 1 can chickpeas, 
  • 3-4 cloves garlic, 
  • 1/4 cup finely chopped parsley, 
  • 1/4 cup finely chopped coriander, 
  • 2 tsp cumin, 
  • 1 tsp turmeric, 
  • 1/2 tsp smoked paprika, 
  • 1 tsp dried oregano, 
  • 1 tbsp apple cider vinegar, 
  • 1 1/2 tbsp olive oil, 
  • 1/2 tsp baking powder, 
  • 2 tbsp all purpose flour, 
  • 1 tsp salt. 
Method:

  • Wrap sweet potato in tin foil and bake at 200 degrees celsius for 45 minutes to an hour or until it is soft and almost falling apart.
  • Drain and rinse chickpeas.
  • Add 1 1/2 cups of drained chickpeas to a bowl and, using your hands or a potato masher, mash to a rough paste.
  • Once the sweet potato has been baked and has cooled enough so that it can be handled, remove the skin and mash with a fork.
  • Add 1 1/2 cups of mashed sweet potato to the chickpeas and mix to combine.
  • Finely mince the garlic and add to the mixture.
  • Add all other ingredients and mix until everything is well combined and you have a smooth mixture. Add more flour if the mixture is too wet. Taste for seasoning.
  • Using your hands, form 4 burger patties from the mixture.
  • Place the patties on a well oiled baking tray and bake at 200 degrees celsius for 25 to 30 minutes, flipping half way through. Alternatively, you can place the patties on a frying pan or grill over medium heat and cook for 10 minutes, flipping half way through.
  • Serve on a toasted bun.
